Where they differ
Bordeaux has the larger stock of museums and more heritage within reach of a day trip, 4 UNESCO-listed places against Nice's 2. It also has many times as many tourist attractions near the centre, which is what makes it the easier of the two with children.
Nice is the one with a coastline: 70 beaches nearby against Bordeaux's 4, and sea at 21°C or more for four months where Bordeaux has none. It also has 3 theme parks within reach against Bordeaux's 1.
Where they are alike
Eating out is where the two are closest. Nice has somewhat more restaurants near the centre, but the range of kitchens is much the same, so neither will feel limited over a week.

What the numbers don't tell you
Value is the one axis to ignore here. It comes from a national price level, so both cities carry the same figure by construction, and it says nothing about which trip costs less. The €160 daily budget beside it is a national estimate rather than a measurement of either city.
Nice's beaches are at their best in exactly the months when its weather is, so July and August put everyone on the same shore. And warm does not mean dry: October and November stay mild there but are the wettest months of its year.
