Where they differ
Goreme is the better base for open country: 11% of the land around it is protected against 1% around Istanbul. It is also the drier of the two, with 5 months at 40mm of rain or less against Istanbul's 4.
Istanbul has many times as many notable places within walking distance of the centre, many times as many museums, and many times as many restaurants, bars and clubs. It also adds 2 beaches and 2 theme parks, and a sea warm enough for swimming in late summer.
Where they are alike
Neither is a strong base for day trips. The countryside around Goreme is more protected, but in both cases the range of excursions is limited, and each has just 1 UNESCO-listed place within day-trip reach.
Their years also run in step: both peak at 30°C in August and are at their coolest in January, and both put a fair number of family-friendly attractions close to the centre.

A traveller after museums and a centre you can walk between sights should go to Istanbul; it also carries the deeper choice of restaurants and the drinking and club scene Goreme effectively lacks.

What the numbers don't tell you
Treat the value comparison as empty. It rests on a national price level, identical for both by construction, so it says nothing about which costs less; the €100 daily budget is one national estimate, not a measurement of either city.
Istanbul's beach and family strengths rest on 2 beaches and swimmable sea for only three late-summer months, so the warm window is also the crowded one. Goreme's weather reads well as an annual average, but January highs sit at 5°C; the dry, warm stretch that lifts it is short, and outside it the choice of places to eat is thin.
When should you go?
