Where they differ
Galway has much more park space near the centre and many more notable places within walking distance. The sea is 1km from the centre with 13 beaches nearby, and there are about three times as many restaurants and drinking places, plus nightclubs and museums Killarney lacks.
Killarney is much smaller, at 14,400 residents against 83,500. Its coast is 18km off and its 6 beaches need a drive; with no nightclubs and little park land near the centre, evenings stay quiet.

What the numbers don't tell you
The value comparison between these two carries no information: the figure behind it is a national price level, identical for both by construction, so nothing here says one costs less than the other. The €187 daily budget is a single national estimate rather than a measurement of either town, and it will not tell you what a room costs in August.
Galway's coastal advantage is about access rather than conditions. The sea is close and there are 13 beaches, but it peaks at 16°C and only in late summer, and no month in either town falls to 40mm of rain or less, so a beach day is weather-dependent.
