Where they differ
Florence keeps everything close: about three times as many notable places within walking distance of the centre as Turin, and about twice as many museums to fill them out. Days there need little transport, and it runs warmer through the year, 11-33°C against 7-29°C.
Turin is the stronger evening city, with roughly twice as many bars and twice as many nightclubs, though only about half sit near the centre, so nights out involve some moving around. Its restaurants also cover a wider range of kitchens.
Where they are alike
Neither is a swimming trip. Turin has 1 beach within reach and Florence none, but neither has a month with the sea at 21°C or more, so water is beside the point in both.
They also land close on families and on eating: similar numbers of restaurants near the centre, comparable appeal for children and no theme park within reach of either. Both have 4 UNESCO-listed places within day-trip reach, and protected land nearby is limited on both sides.

Someone with three or four days and a list of galleries should take Florence. It holds about twice as many museums as Turin and packs its notable places tightly around the centre, so little time goes on transport.
A traveller who plans the day around dinner and what follows it is better served in Turin: a wider range of kitchens and roughly twice as many bars and clubs, though half of them sit away from the centre.
Families will find the two close. Turin has somewhat more attractions near the centre, Florence more park space and shorter distances on foot, and neither has a theme park or usable sea swimming within reach.
What the numbers don't tell you
The value figure is a national price level, identical for both by construction, so it says nothing about whether one costs more than the other, and the €155 a day beside it is one national estimate rather than a measurement of Florence or Turin. Treat the price comparison as carrying no information.
No weather station near Turin records sunshine hours, so that figure is missing rather than low, and its monthly picture rests on temperature and rainfall alone. Note too that Florence's driest months are also its hottest, up to 33°C, so dry does not mean comfortable.

Florence suits late spring, 24-29°C in May and June with 41-63mm of rain. Midsummer is drier but reaches 33°C, which is a lot for a city walked on foot, and from October the rain sets in above 100mm a month.
Turin's summer is the gentler one, 26-29°C from June to August, with July the driest of those at 57mm. Its spring is the wetter of the two, so a spring trip carries more risk of rain than the same week in Florence.
