Where they differ
Catania is the better base for days spent away from the water: about three times as many restaurants near the centre and a much wider range of kitchens, many times as many museums and tourist attractions, and about three times as many places to drink. Sorrento's edge is the water: 78 beaches against 5, and the sea at the centre rather than 1km out. It also has 5 UNESCO-listed places within day-trip reach against 3.
Where they are alike
Neither is hard work in any month. Both peak in August and bottom out in January, both stay mild through the winter with no cold snap to plan around, and both get a comparable amount of sun over the year.
Both are coastal towns with five months of sea at 21°C or more, topping out at 26°C in August. Neither has much protected land around it, so day trips support the trip rather than justify it.

What the numbers don't tell you
The value comparison between these two carries no information. It is a national price level, identical for both by construction, and the €155 daily budget beside it is one national estimate rather than a measurement of either city. Neither is the cheaper trip on this evidence, and a town of about 15,400 residents will not price a summer room the way a large city does.
A strong beach showing says nothing about crowding: 78 beaches serve a small town whose warmest sea and driest weather fall in the weeks everyone else books. Catania's best-rated months are in spring, when the sea is still 16-18°C.
