Where they differ
Cordoba has many times as many tourist attractions near the centre, which is what separates the two for families, and it runs much warmer, with daytime highs of 15-37°C across the year against 11-25°C. Four months pass at 40mm of rain or less; Santiago has none. There are also somewhat more places to drink.
Santiago de Compostela has the better share of protected land around it, 11% against 6%, so walks and day trips out of town carry further, and its summers stay moderate rather than hot.
