Where they differ
Dubrovnik packs many more notable places into walking distance of the centre, so a day needs less transport. It has about three times as many museums, roughly twice the park space near the centre, and many more tourist attractions close in. The choice of kitchens is much wider.
Sorrento has somewhat more restaurants near the centre, though less variety in them. It is the better base for getting out: 7% of the surrounding land is protected against 4%, and 5 UNESCO-listed places sit within day-trip reach against 3.
Where they are alike
Both sit on the water, with the sea 0km from the centre in each, and both offer 5 months with the sea at 21°C or warmer, topping out at 26°C in August. Beach days work much the same way in either.
Nights are quiet in both, with the drinking places clustered near the centre and clubs a small part of the picture. The yearly weather pattern is close too: the same warmest and coolest months, and comparable sunshine.
Which traveller are you?

What the numbers don't tell you
The daily budget, €138 for Croatia and €155 for Italy, is a national price level for restaurants and hotels, not a measurement of either town. Both are small places under heavy visitor pressure, and such towns can sit far from their country's average in either direction, so treat the gap as background rather than as a reason to choose.
The beach picture is level on paper, but both peak in the same weeks: warmest sea and lowest rainfall land in high summer, and that is when a compact centre and its stretch of coast carry the most people.
When should you go?

Dubrovnik is at its best in July and August, when highs reach 29°C and the sea is warmest; these are also its driest months, near 54-62mm. Either side of that, rain builds fast, and by late autumn it is the wetter of the two by a wide margin.
Sorrento's window is wider. June already gives 28°C with 29mm, and midsummer stays under 20mm. October still holds 23°C, on markedly less rain than Dubrovnik, which makes it the safer shoulder-season choice.
