Where they differ
Mostar's strengths are on land and close in: about twice as many museums as Zadar, and somewhat more notable places within walking distance of the centre. It is also the warmer city, reaching 33°C in high summer.
Zadar is the choice for water and open space: 49 beaches nearby against Mostar's 7, sea warm enough for swimming through late summer, 12% of the surrounding land protected against 6%, far more park space near the centre, and one theme park within reach.
Where they are alike
Heritage sits closest of all. Neither city holds a large museum stock, and each has UNESCO-listed places within day-trip reach, 2 from Zadar and 1 from Mostar.
The evening and the walkable centre are close too. Neither has a big drinking scene, and in both what exists sits near the middle of town, as do the main sights. Eating out is limited in both, with Zadar's range of kitchens a little wider.

Swimmers and anyone planning days by the water should take Zadar: 49 beaches within reach against Mostar's 7, and sea that reaches 25°C in late summer, where Mostar offers no swimming at all.
Anyone whose trip is museums and old streets in walking order should pick Mostar, with about twice as many museums as Zadar and more notable places packed within walking distance of the centre.
Families are better served in Zadar. The two have similar numbers of attractions near the centre, but Zadar adds far more park space, one theme park within reach and the beaches themselves.
What the numbers don't tell you
This data carries no daily budget figure for Mostar, so no cost comparison between the two is possible. The value ranking rests on a different measure that both cities do have, and Zadar's €138 a day stands alone, with nothing on the Mostar side to set against it.
No weather station near Zadar records sunshine hours, so that part of the weather picture is unmeasured there and its monthly ranking rests on temperature, rainfall and sea temperature alone. Zadar's beach count also says nothing about crowding in the months when the sea is warmest and the rainfall lowest.

Zadar holds up better either side of midsummer. June and September are the pick, with highs of 28°C and sea at 22°C rising to 23°C. July is drier still at 25mm, and Zadar's wettest month stays well below Mostar's.
